内容摘要:The intersection of food, health, and environmental quality lies at the core of sustainable development. Based on an analysis of transaction data from 4.2 million consumers across 32 cities in India, this paper explores the impact of air pollution on food consumption. Using wind direction as an instrumental variable for PM2.5 exposure, the study finds that for every 50-microgram increase in PM2.5 concentration per cubic meter, spending on unhealthy food decreases by 6.29%, while spending on healthy food rises by 7.51%. This effect is not driven by changes in shopping patterns, income fluctuations, or emotional responses, but stems from pollution-induced preventive health behaviors. The promotion of Delhi’s air quality early warning system has raised public awareness, further amplifying the inhibitory effect on the purchase of unhealthy food. This study reveals that dietary choices represent a novel adaptive channel for addressing environmental health risks.
